東京・富士見ヶ丘のロースタリー・カフェ、蜃気楼珈琲とのコラボビール第3弾は、コーヒーを使用したSour IPAです。

コーヒーの苦味ではなく甘さやフルーティーさをフィーチャーした甘味・酸味・苦味の調和を探る魅惑シリーズ。過去2作はIPAでしたが、今回はゐのすビール初のサワーができました。

スペシャルティコーヒーは浅煎りで提供されることが多く、酸っぱさを感じやすいことがあります。それならサワービールにコーヒーもいけるのではないか、という取り組み。アルコールと同時に乳酸菌を作り出す、フィリーサワーという酵母を使用し、乳酸の酸味を味のベースにしています。ボディにはオーツ麦とラクトースを用いることで、わずかに粘度と甘さを残しました。
コーヒーはケニア・Maguta EstateのCMN（Carbonic Maceration Natural） JASPER。Carbonic Macerationは2015年頃に提唱されたコーヒー豆の新しい発酵方法で、もともとボジョレーヌーボーなどのワインで使用されていた嫌気性発酵の技法をコーヒーに応用したもの。コーヒーが本来持つ、果実のような甘さや香りが感じられます。
発酵由来の酸味と甘味の調和。複雑でありながら軽やかな、初夏らしいバランスでまとまりました。

Our third beer in our collaboration with Shinkirou Coffee, a cafe/roastery in Fujimigaoka, Tokyo, is a coffee-infused Sour IPA.

This 魅惑("Miwaku") series explores the harmony of sweetness, sourness, and bitterness, featuring not the bitterness of coffee, but its sweetness and fruity character. The last two were IPAs, but this time yinosbeer created its first sour IPA.

Specialty coffees are often served lightly roasted and can be sour rather than bitter. If so, we thought that coffee could also be used in sour beer. We used a yeast called Philly Sour, which produces lactic acid bacteria at the same time as alcohol, and used the sourness of the lactic acid as the flavor base. Oats and lactose are used for the body, leaving a slight viscosity and sweetness.
The coffee used in this beer is CMN (Carbonic Maceration Natural) JASPER from Maguta Estate in Kenya. Carbonic maceration is a new fermentation method for coffee beans proposed around 2015, originally used in wines such as Beaujolais Nouveau. We applied the newborn fermentation to bring a fruity sweetness and aroma that is inherent in coffee.
Harmony of fermentation-derived acidity and sweetness. The result is a totally new beer, complex, yet light, early-summer balanced.
